Caribbean Comfort in a Pot: My Favorite One-Pot Picnic Dish
There’s something special about a dish that brings back the warmth of home with every bite. Growing up in the Caribbean, I was surrounded by vibrant flavors, rich traditions, and food that always seemed to tell a story. One of my favorite meals—simple, satisfying, and bursting with island spices—is a one-pot wonder often carried to picnics, beach outings, and family gatherings. It’s hearty, easy to prepare, and tastes even better the next day.
Today, I’m sharing my version of this classic dish, a flavorful pot of Caribbean Chicken Pelau—a perfect balance of savory chicken, rice, and pigeon peas, all cooked together with rich, aromatic spices. If you’re looking for a meal that’s comforting yet practical, this is it!

Ingredients
Here’s what you’ll need to bring this dish to life:
1 lb chicken (thighs or drumsticks, cut into pieces)
1 ½ cups rice (preferably parboiled for a firm texture)
1 cup pigeon peas (canned or pre-cooked if using dried peas)
1 small onion, finely chopped
2 cloves garlic, minced
½ red bell pepper, diced
1 tablespoon green seasoning (or a mix of thyme, scallions, and parsley, finely chopped)
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon paprika
1 teaspoon all-purpose seasoning (optional, for extra depth)
1 tablespoon tomato paste
2 tablespoons coconut milk
1 tablespoon brown sugar
2 tablespoons vegetable oil
3 cups chicken broth (or water, adjusted as needed)
Instructions
1. Season the Chicken
In a bowl, mix the chicken with green seasoning, salt, black pepper, paprika, and all-purpose seasoning. Let it marinate for at least 30 minutes (or overnight for deeper flavor).
2. Caramelize the Sugar
In a large pot, heat the oil over medium heat. Sprinkle in the brown sugar and let it melt and darken until it turns a deep amber color. This step gives the dish its signature rich flavor and color. You can also use store bought browning.
3. Brown the Chicken
Carefully add the marinated chicken pieces to the pot, stirring to coat them in the caramelized sugar. Allow them to brown for about 5 minutes on each side.
4. Add Aromatics and Tomato Paste
Stir in the chopped onion, garlic, and bell pepper. Let them cook until softened, then add the tomato paste. Mix well to combine.
5. Cook the Rice and Peas
Add the rice and pigeon peas to the pot, stirring to incorporate them into the seasonings and chicken.
6. Simmer to Perfection
Pour in the coconut milk and chicken broth. Stir well, then bring the pot to a gentle boil. Once it starts boiling, reduce the heat to low, cover, and let it simmer for about 25-30 minutes, or until the rice is fully cooked and fluffy.
7. Fluff and Serve
Once done, use a fork to fluff the rice and let it sit for a few minutes before serving. The flavors will continue to meld beautifully.
